The concept is a refined all-day café and evening bistro planned for 20 Fair Street, New Haven, developed by the owners of G Café Bakery in New Haven and Bar Bouchée in Madison. The concept brings together artisanal breakfast pastries, viennoiseries, breads, and house-roasted coffee from G Café, alongside a thoughtful daytime menu of sandwiches, salads, soups and egg dishes. In the evening, the bakery-café transitions into an intimate Mediterranean-inspired bistro featuring shareable tapas style -small plates, European-influenced cocktails, espresso-forward offerings and a curated wine selection all within a warm, design-forward setting tailored to the resident and neighborhood experience.
